My husband doesn't like the bitterness of the bitter melon, so I always prepare it properly. The mayonnaise gives a smooth taste.

If you don't like the bitterness, be sure to remove the seeds and pith (the pith is where the bitterness comes from).
The bitterness can be removed further by rubbing salt into your slices and then washing it off. Recipe by Shibachama

Ingredients

2 servings
  • 1/2Bitter melon
  • 150 gramsBoiled scallops (or baby scallops)
  • 1Onion
  • 3 tbsp☆ Mayonnaise
  • 2 tsp☆ soy sauce
  • 1 tbsp☆ Mirin
  • 1Salt
  • 1Vegetable oil for stir-frying

Steps

  1. 1

    Partially defrost the scallops and drain. Thinly slice the onions.

  2. 2

    Remove the seeds and pith from the goya. Slice thinly, sprinkle on salt, rub, wash, and drain (this is to remove the bitterness and scum).

  3. 3

    Heat oil in a pan and fry the scallops and bitter melon. When it is thoroughly cooked, add the ☆ ingredients and taste as you go along, adding salt if necessary. Then it's done.
