Pour hot water over the fish or dip the fish in a pot of boiling water.

If the fish turns white, it's ready.

Pour all the ingredients and water into a pot and turn on the heat.

When it comes to a boil, add the fish and cover with a drop lid (otoshibuta). Simmer in medium heat until the sauce reduces by 1/2 to 1/3.

Remove the lid and pour the sauce over the fish with a ladle. Simmer in low heat for 1 to 2 minutes.

When the fish turns shiny, it's done.
