This chicken turns out so delicious... you won't even think it's chicken. Perfect for tacos, empanadas, flautas—any dish where you'd use plain shredded chicken, this pulled version is even better.

Peel the tomatoes (I used a vegetable peeler, but you can also blanch them), then dice them into small cubes.

Slice the onion into thin strips. In a bowl, mix together the taco seasoning, cumin, and salt. Place the chicken in the slow cooker, then add the rest of the ingredients on top, spreading them out evenly.

Cover and cook on low for 8 hours. You can stir halfway through to help mix the ingredients.

After cooking, remove any bones from the chicken breasts and use a fork to shred the chicken and mix it well with the vegetables until everything is pulled apart.

It's ready to use for tacos with guacamole, like in this example.
