Spring Rolls Made with Everyday Ingredients

These delicious spring rolls don't contain too many ingredients, but they are nice and crunchy. When it's just me and my two daughters home for dinner, I don't cook any rice and I just make lots of these raw spring rolls. Since I always have a lot of different sauces on hand, we never get tired of the flavor. Plus we can take in lots of nutritious vegetables, so it's completely satisfying.
Lettuce is more crispy and will tear through the spring roll skins. It's best to use a leafy lettuce such as red-leaf lettuce, bouquet lettuce, or pleated lettuce, but if you only have regular lettuce, blanch it quickly or slice into somewhat wide strips. Cooking Instructions

Using red-leaf or bouquet lettuce or any kind of leafy greens will be easier to roll up the fillings in the center. Baby leaf lettuce also tastes great.

Julienne the cucumber and carrot. Reconstitute the wakame according to the package instructions and wring out the excess moisture.

Once all of the filling ingredients are ready, roll them up. The spring roll skins only need to be slightly wet. They softened as the vegetables release moisture.

Lay out the ham and then place the other vegetables on top. Since the ingredients will slide around, use your finger to hold them down as you roll them up in the skins.

Slice the rolled up raw spring rolls into bite-sized pieces. If you will be eating with your hands, cut them in half. If you want to eat them in one bite, cut them into quarters.
