I found some gluten-free recipes while in America, so I rearranged them one to suit my needs for sugar-free and dairy-free.

If you make the cookies about 2 tablespoons large, you will be able to make 12 cookies.
If you want to avoid dairy, you can use coconuts oil instead of butter, and carob chips instead of chocolate chips.
In order to make these sugar-free, I use 1/2 teaspoon of concentrated Stevia. Recipe by chargers

Ingredients

12 servings
  • 150 gramsAmaranth flour (or any type of flour)
  • 1/2teapooon Baking soda
  • 1/2 tspSea salt (or regular salt)
  • 110 gramsCoconut Oil (or unsalted butter)
  • 150 mlStevia (or brown sugar)
  • 1/2 tspVanilla essence
  • 1 largeegg
  • 200 mlCarob chips (or chocolate chips)
  • 100 mlYour choice of nuts (optional)

Steps

  1. 1

    Preheat the oven to 190°C. Grease a baking tray or line it with parchment paper.

  2. 2

    Combine the gluten-free flour, baking soda, and salt in a bowl.

  3. 3

    In a separate bowl, add the egg and brown sugar. Whip until it becomes fluffy.

  4. 4

    Add the butter to Step 3 and use a whisk to stir it in. Add the vanilla.

  5. 5

    Stir the powdered ingredients from Step 2 into Step 4.

  6. 6

    Add in the chocolate chips and nuts (chopped).

  7. 7

    Scoop out the batter into cookie shapes and bake for 9-11 minutes. Once baked, let them cool and enjoy.
