Every summer we travel close to Mont Saint Michel in France to visit my parents' village. My 3 boys love helping out their Grandpa in the garden. They take as much pleasure harvesting green beans and zucchini as biting into sun warmed tomatoes and cucumbers stolen from the garden. This bento is a thank you gift for my dad, a tribute to his hard work, a message of love for all of their fun-filled summer memories.

It was a bit challenging to keep within the budget requirements for this vegetarian bento. So I made an economical French toast for dessert instead of fruits. Also I prepare bento every day for my 3 kids, so for this contest I had to think about 1 serving. Recipe by Legout office

50 gramsCouscous (Semolina flour)
1/2Cucumber (diced)
4Cherry tomatoes (diced, with the juices)
1handful Fresh parsley (chopped)
1 smallspoonful Blend of dried herbs
30 gramsHot water
20 gramsOlive oil
20 gramsLemon juice
1spoonful Vegetable bouillon granules

Steps

Mix the couscous in a bowl with the liquid ingredients.

Mix all the other ingredients and set aside. The couscous will slowly absorb the liquids.

Season with salt and pepper if needed, and pack in a bento box.

Other main dishes are as important for well balanced meal.

Make a potato salad by mixing steamed potatoes with "cornichons" (French pickles) and a dash of mayonnaise.

Cut out a thick slice of cheese (P for "Papy" = Grandpa).
