The other day I first made ‘Salty Rhubarb Paste’, that can be a substitute for 'Umeboshi'. It was too sour for me, so I decided to added Sugar. When I tasted it, the flavour instantly brought back a memory of my childhood and I remembered a yummy paste that I used to eat with freshly cooked Rice. I tried to recreate the paste. IT WAS SERIOUSLY YUMMY!!! And I couldn’t believe I made it with Rhubarb.

Ingredients

1 to 2 servings
  • 1 tablespoonSalty Rhubarb Paste
    Salty Rhubarb Paste
  • 1 sachet (2.5 g)Katsuobushi (Bonito Flakes) *OR 2 sachets (5g)
  • 1 teaspoonSugar
  • 1 teaspoonSoy Sauce
  • 1 teaspoonToasted Sesame Seeds

Steps

  1. 1

    Combine all ingredients. How simple is that?

  2. 2

    *Note: If you add 2 sachets (5g) Katsuobushi (Bonito Flakes), you might think it is too much. Today I used 2 sachets. Once combine, dry fish flakes absorb the moisture and the volume will reduce.
