Sweet Plantain Empanadas with Cheese

Wash, cut, and boil the two plantains for 30 minutes.

Remove the plantains when the skins split open and peel them.

Add the flour, salt, and vanilla extract. Mash everything together very well until the mixture is smooth.

Form small balls and flatten them using plastic wrap. Add the cheese in the center.

Fry the empanadas in vegetable oil until golden brown.
- 6
Drain on a paper towel to remove excess oil. Enjoy!
