Lemon Rice

An easy and simple South Indian food recipe made with boiled rice and generous amount of lemon flavour. It is one of the frequently made recipe in South Indian with leftover rice for morning breakfast .yet I can also be served for lunch and dinner with choice of chutney of spicy curries .

Firstly, in a large kadai heat 2 tbsp oil and roast 2-3 tbsp peanut.
also, roast 2-3 tbsp cashew until it turns golden brown and crunchy.
keep the fried peanuts and cashews aside.
in the same oil add 1 tsp mustard, 1 tsp whole black gram, 1 tsp chana dal, 1 dried red chilli. - 2
Also add 1 inch ginger, 2 chilli, pinch hing and few curry leaves.
splutter the tempering on medium flame.
add in ¼ tsp turmeric and saute slightly. - 3
Further, add 2 cup cooked rice and ½ tsp salt.
mix well making sure everything is well combined.
also, add 2 tbsp coriander, grated coconut, peanuts, cashew nuts and 3 tbsp lemon juice. mix well. - 4

Finally, enjoy lemon rice with coriander chutney or spicy curries (your choice)
