To keep the rice grainy and firm, gently fluff the cooked rice with a fork to allow it to cool completely.

Heat a kadai (pan) over medium heat and add 2 tsp oil and fry the cashews till golden and crispy. Then remove them to a plate.

Now in the same pan add the remaining 1-2 tsp of oil and saute the mustard seeds. Add ginger, green chillies and curry leaves. Stir fry for half a minute. Then add turmeric powder, asafoetida and salt. Mix well.

Next add cooked rice and lemon juice. Mix everything well. Cook over low heat for 5 minutes. Garnish with cashew nuts. Then turn off the gas.

While serving Lemon rice, remove it to a serving bowl and serve hot with pickles, papad or curd.
