Grandpa Ryan's Most Awesome Pandesal

For a while it was a secret recipe! 🥲
On several occasions when we would get together various ingredients would come out as a slip of the tongue.

I was trying to figure out each time we got together what secret ingredients was he using? 🤔

Ryan took me by surprise one day when he handed me his recipe and said "I'm giving you my Pandesal recipe, It's no longer a secret"

I explained to Ryan that Now Having the secret recipe in hand, it was a big fail each of the two times I attempted to duplicate his Pandesal.

With that being said, one day he paid us a surprise visit by coming over with not only a batch of Pandesal, but a revised detailed recipe and "Magic Breadboard!"

As you can see in all the pictures included that I used the magic breadboard in all my preparation.

So now, finally, success! at duplicating his awesome delicious Pandesal.

I personally think it's the breadboard that makes all the magic happen!

PS. Even though Ryan is now retired,
he enjoys making breadboards in his woodworking shop.

If you too would like to own a "Magic Breadboard" for making awesome delicious Pandesal. let me know and I'll get you his contact information. 🍞

Ingredients

15 minutes
24 -25 rolls
  1. 2egg (Room Tempiture)
  2. 1/2 cuphoney
  3. 1 cup+ 2 tbls whole or 2% milk (Room Tempiture)
  4. 3 tbsp.butter (melted to liquid, not hot)
  5. 3 tsp(rapid rise yeast)
  6. 4 cups+ 2 tbsp bread flour
  7. 1 tspsalt

Cooking Instructions

15 minutes
  1. 1

In bowl: (using the following four steps makes it a bit easier to mix.)
    • Add 1 egg and beat well.
    • Add 1/3-cup honey and mix well.
    • Add 1/4-cup milk and mix well.
    • Add 1-cup milk and mix well

  2. 2

Heat in microwave for about 50 seconds, stir lightly and test if warm. Carefully bring
temperature up until slightly warm (105 degrees) to the touch, do not get it hot or the yeast will not work.

  3. 3

Add 3 tsp yeast to breadmaker.
    • Pour liquid measure over yeast and mix.
    • Let mixture sit in breadmaker for 12 minutes.
    • After the 12 minutes, add softened melted butter

  4. 4

While the yeast is activating, measure the dry ingredients.
    4 cups + 2 tbsp bread flour
    1 tsp salt
    • Add flour mixture to breadmaker.

  5. 5

Start dough cycle. When completed put dough on a floured cutting board.

  6. 6

With a digital scale set to metric measurement, cut pieces of dough and make dough balls 40-
44 grams in size. (Size is your preference). Fold the balls over several times (approximately 8-9 folds) and pinch the bottoms to complete each roll.
    Breadcrumbs (Italian style)
Put about 2 cups of breadcrumbs into a bowl. As you make your rolls, roll the dough in the breadcrumbs.
Lightly oil a large cookie sheet with spray oil. Line rolls on pan.

  7. 7

When all the rolls are completed, cover with plastic wrap or light towel and let rise for 60
    minutes.
Bake at 350 degrees for 15 minutes. (Suggest you set a timer to insure not overcooking.)
NOTE: As an alternative to Pandesal style bread, eliminate rolling in breadcrumbs and brush
with melted butter AFTER baking for soft buttery dinner rolls.
