Mini Cheese and Sesame Rolls

Place the flour in a bowl and add the salt, sugar, yeast, 1 tablespoon of toasted sesame seeds, and powdered milk. Mix well by hand until all ingredients are combined. Add the shortening to the flour and knead well until all the flour is coated with the shortening. Add half of the milk and mix until it disappears into the flour, then add the remaining milk. Knead until it forms a soft dough, then cover and let it rest for an hour.

In a bowl, add the cheese and 1 tablespoon of olive oil, and mix with a little fresh thyme.

Lightly dust with flour, then roll out the dough after it has risen. Place the cheese on top, remove the empty edges, and roll the dough into a log shape. Cut into medium-sized pieces.

Arrange the dough pieces on a baking sheet, leaving space between each one.

Prepare an egg wash by mixing an egg with 1 tablespoon of milk and a pinch of vanilla. Brush the tops of the rolls with the egg wash and sprinkle a little sesame on top.

Place the baking sheet in a very hot oven, which is essential for successful baking, at 356°F (180°C) and bake the rolls for 20 minutes until they turn light golden brown.

Serve the rolls on a plate with tea or milk tea. Enjoy!
