Sev khamani is a popular Gujarati snack which is prepared using chana dal. It is prepared using two methods. One is traditional where by chana dal batter is cooked in a heavy bottom pot. The other method is to steam the batter and crumble it. The traditional method make soft and melt in mouth sev khamani. Ingredients

7hr + 1hr
4 servings
  • 1 cupchana dal
  • 1/4 tspturmeric
  • 1 tspsalt
  • 1/2 tspeno
  • 3 tbspoil
  • 3 tbspsugar
  • Tempering -
  • 3 tablespoonoil
  • 1 tspmustard
  • 1 tsphing/ asafoetida
  • 4green chillies
  • 1 inchginger
  • 8-10 clovesgarlic
  • 1 tbspcashew nut
  • 1 tbspraisins
  • 2 tbspcoriander leaves
  • 2 tbspfresh garlic
  • 1.5 tsplemon juice
  • 1/3 cupwater
  • Chutney -
  • 1 cupkhamani
  • 2green chillies
  • 1/2 cupcoriander leaves
  • 2 tspsugar
  • 3 tbspwater
  • Salt to taste
  • Other ingredients -
  • 1 cupnylon sev
  • 1/4 cuppomegranate seeds
  • 1/4 cupcoriander leaves
  • 1/4 cupfresh garlic

Steps

7hr + 1hr

    Wash and soak chana dal for 6 hours. Drain it and grind it to a little coarse paste using 2 - 3 tbsp water. Do not add lot of water. Cover and keep it for an hour.

    Now add turmeric and salt to it and mix well. Add eno and give it a good mix.

    A heavy bottom pot or non stick pot should be used to prepare sev khamani. Heat oil, add chana dal paste to it and mix it well. Now cook it on medium heat for 3 to 4 minutes. Keep stirring every 2-3 minutes. After 6 to 8 minutes add 2 to 3 tbsp of water in it and cover and cook it on medium heat. It will take around 15 minutes to cook. When it does not stick in your hand, it is ready. Turn off the heat and leave it for 5 minutes.

    When it is a bit cold, add sugar to it and mix it well. As it is hot sugar will melt quickly. Now let it cool down completely and crumble it with your hand.

    Heat oil to prepare tempering. Now add mustard seeds to it. Let it crackle and add hing along with crushed green chilli, ginger and garlic. Now add cashew nuts, raisins, coriander leaves, fresh garlic and lemon juice to it along with little bit of salt. Mix everything well and add 1/3 cup of water.

    Pour prepared tempering on khamani and mix everything well. Cover and cook it again on low heat for 5 to 7 minutes.

    To prepare chutney, take khamani, green chillies, coriander leaves, sugar, salt and water in a mixer jar and grind everything.

    Serve hot sev khamani with sev, pomegranate seeds, coriander leaves and fresh garlic along with chutney.
