Red Curry Chicken with rice noodles

kanisuroll @joym15
Cooking Instructions
- 1
Soak the rice noodles as directed by package, drain.
- 2
In a large skillet heat oil over medium-high. Add chicken; cook for 8-10 minutes or until no longer pink, adding the vegetables the last 4 minutes of cooking. Remove mixture from skillet.
- 3
Use same skillet and combine coconut milk, water, sugar, fish sauce, red curry paste and pepper. Bring to a boil. Stir in rice noodles and chicken mixture. Return to boiling; reduce heat. Simmer, uncovered, for 2 minutes so noodles are tender and sauce is thickened. Sprinkle with basil to serve.

I love Thai cuisine! I could eat it every day. I often play around with curry pastes & dry curry spices in my cooking. In this recipe, I added peanut powder for added protein. Angela McWilliams -

The past few months, it's been all about Indian-style curries in our house, so the time seemed right to get back to some Thai-inspired flavours. Normally I would've made my own curry paste, but having been Halloween, time was at a premium and convenience won out. The recipe below is pretty mild heat-wise (for my daughter), so feel free to throw a chili or two into the mix to spice it up. Robert GonzalThai red curry with chicken Thai red curry with chicken
I made this curry very often and tried to perfect it. I like this balance of ingredients, but you can adjust to your liking. More curry paste for more spice, more coconut milk for a softer taste. My girlfriend cant take it when food is too spicy and I like spicy, but this balance is perfect for both of us. Pick a good curry paste, some are without additives with only fresh herbs. You can also make the curry paste yourself but you need a lot of exotic herbs and a good recipe. Enjoy! sjonnieSweet Curry Rice Sweet Curry Rice
