Red Curry Chicken with rice noodles

Ingredients

  1. 8 ozdried wide rice noodles, broken
  2. 1 Tcanola oil
  3. 1 1/2# skinless, boneless chicken breast, cut into 1" pieces
  4. 1 (16 oz)pkg frozen desired stir fry vegetables, thawed
  5. 1 (14 oz)can unsweetened light coconut milk
  6. 1/2 Cwater
  7. 1 Tsugar
  8. 1 Tfish sauce
  9. 1 tspred Curry paste
  10. 1/4 tspblack pepper
  11. 1/4 Cfresh basil

Cooking Instructions

    Soak the rice noodles as directed by package, drain.

    In a large skillet heat oil over medium-high. Add chicken; cook for 8-10 minutes or until no longer pink, adding the vegetables the last 4 minutes of cooking. Remove mixture from skillet.

    Use same skillet and combine coconut milk, water, sugar, fish sauce, red curry paste and pepper. Bring to a boil. Stir in rice noodles and chicken mixture. Return to boiling; reduce heat. Simmer, uncovered, for 2 minutes so noodles are tender and sauce is thickened. Sprinkle with basil to serve.
