Set heat to high and add cooking oil, garlic, shallot, and red curry paste. Sauté until fragrant.

Add half of the coconut milk and stir until combined.

Add Kaffir lime leaves, fish sauce, seasoning sauce, ginger, brown sugar, and remaining coconut milk.

Add chicken and red peppers and cook until meat is cooked and tender.

Add bamboo shoots and Thai basil. Bring to boil and then turn stove off.

Turn off heat and serve over jasmine rice. Enjoy!
