Ingredients

  • 1 lbcubed chicken thigh
  • 2 cans (13.5 oz)coconut milk
  • 3 tbspcanola oil
  • 1 tbspfish sauce
  • 1 tbspGolden Mountain sauce
  • 1 tbspginger paste
  • 8 tbsp (4 oz)Thai red curry paste
  • 1 tbsplight brown sugar
  • 2sliced red bell peppers
  • 1minced shallot
  • 6minced garlic cloves
  • 1 cupThai basil leaves
  • 3-5Kaffir lime leaves (optional)
  • 1 cupbamboo shoots (optional)

Steps

  1. 1

    Set heat to high and add cooking oil, garlic, shallot, and red curry paste. Sauté until fragrant.

  2. 2

    Add half of the coconut milk and stir until combined.

  3. 3

    Add Kaffir lime leaves, fish sauce, seasoning sauce, ginger, brown sugar, and remaining coconut milk.

  4. 4

    Add chicken and red peppers and cook until meat is cooked and tender.

  5. 5

    Add bamboo shoots and Thai basil. Bring to boil and then turn stove off.

  6. 6

    Turn off heat and serve over jasmine rice. Enjoy!
