Ingredients

  1. 2 tblsOlive oil
  2. 1 lbboneless skinless chicken breasts, cut into bite size piece
  3. 1small onion, thinly sliced
  4. 2 clovesgarlic, finely chopped
  5. 2 tblsred curry paste (adjust to your preference)
  6. 1 cupwater
  7. 1 cancoconut cream or coconut milk
  8. 3/4 tblsfish sauce
  9. 1 tspsugar (or brown sugar)
  10. 1 tsplime juice
  11. 1red pepper, seeded and cut into strips
  12. 1 tblscilantro, chopped
  13. Lime wedges, optional
  14. Green onion, sliced, optional

Cooking Instructions

    Heat skillet on medium heat and add cooking oil. When heated add onion, saute until almost translucent, add garlic saute another minute.

    Add chicken and cook until surface turns white.

  3. 3

    Add red curry paste, stir to combine well.

  4. 4

    Add water, coconut cream, fish sauce, sugar and lime juice. Turn heat to low and simmer until curry sauce thickens.

    Add red pepper. Simmer for another 2 minutes. Add chopped cilantro.

    Serve immediately over steamed rice with lime wedges, cilantro and green onion.
