Oat and Apple Pancakes🥞

A very light adaptation of @Lena's pancakes, without flour, dairy, or banana, making it extremely light but very useful for sticking to a diet without missing out on cravings. Plus, with the apple and cranberries, they turn out juicy and flavorful.

A very light adaptation of @Lena's pancakes, without flour, dairy, or banana, making it extremely light but very useful for sticking to a diet without missing out on cravings. Plus, with the apple and cranberries, they turn out juicy and flavorful.
Cooking Instructions

Mix the dry ingredients: rolled oats, oat flour, cinnamon, and baking powder.

Peel and grate the apple, then add it to the previous mixture along with the rest of the ingredients: egg whites, sweetener, vanilla extract, and cranberries. Mix well.

Cook in a skillet with coconut oil over medium heat, in portions of about 3 tablespoons, shaping them into circles. Flip when they are golden on the bottom, and continue cooking on the other side.

Ready to serve. I just used yogurt here, but any low-sugar syrup works well.
