Ingredients

  1. 1/4 cuprolled oats
  2. 1/4 cupoat flour (ground oats)
  3. 1 tspground cinnamon
  4. 1small green or yellow apple
  5. 2egg whites (1/4 cup)
  6. 1 tspsweetener, I used erythritol
  7. 1/2 tspvanilla extract
  8. 2 tbspcranberries
  9. 1/2 tspbaking powder

    Mix the dry ingredients: rolled oats, oat flour, cinnamon, and baking powder.

    Peel and grate the apple, then add it to the previous mixture along with the rest of the ingredients: egg whites, sweetener, vanilla extract, and cranberries. Mix well.

    Cook in a skillet with coconut oil over medium heat, in portions of about 3 tablespoons, shaping them into circles. Flip when they are golden on the bottom, and continue cooking on the other side.

    Ready to serve. I just used yogurt here, but any low-sugar syrup works well.
