Steps

Preheat oven to 200 degrees

Break up mince with knife

Add one egg and whisk with knife to mix in

Add tbsp of salt and pepper (fresh not dried) and whisk it in (dont compact it keep it loose)

Add chilli flakes and whisk it in (personal preference how much)

Add worchestershire sauce 1 tbsp and mix in with knife

Add tsp of tomato puree and mix in

Form burgers in hand and place on grease proof or tinfoil (keep them loose do not pat them down or overly compress) then wash hands

Place in oven for 12 minutes on 200 degree heat

Cut lettuce (1 slice for each burger)

2 slices of tomato for each burger

Lightly toast brioche buns in toaster (dont let it get hard)

Turn them over after 12 minutes when browned and let them cook for 10 more minutes

Add cheese slices and cook for 2 minutes so that it melts on top

Build burger. Mayo on top and bottom not too much. Tincy bit of mustard on base if wanted. Lettuce on base. Then burger. Then tomato. Then ketchup.
