Tomato Soup

Firstly wash all the veggies and cut them into pieces. Now put veggies inside the pressure cooker (chopped tomatoes, onion slices, garlic pods, beetroot cubes, carrots cubes) Add sufficient amount of water and little salt and pressure cook them. Now wait for 4 to 5 whistles. Wait till the air pressure releases.

Now keep a strainer over a big vessel and strain the boiled tomatoes over it. Now smash rall of them together with the help of a spoon. Finally the seeds and tomato peals will remain over the strainer, throw them and you will get a smooth kind of tomato puree.... Now add a cup of warm water and mix it.

Now heat a pan, add a tbsp of butter in it. Then add a bay leaf and some black peppercorns. Let them splutter a bit then add the tomato soup in it. Let it come to a boil, then add some salt, sugar and black pepper powder. Give it a mix. Finally add the cornflour slurry and mix it. Now let it simmer for 2 to 3 mins. Your tomato soup is now ready.

Now let's prepare some croutons. For that cut the sides of a bread slice then cut them into small squares as shown below. Now heat a pan add some butter then add all the bread squares in it. Flip them well from each sides. Wait till the bread becomes golden and crispy. Then turn off the flame.

Now pour the hot soup in soup bowls and serve it with some crispy croutons. Enjoy hot tomato soup this winter with your loved ones.
