My Christmas Nutty Cake (no eggs)

This Christmas Nutty Cake, I baked as a treat on the eve of Christmas in memory of my late mother in law. She was a great fan of cakes.
I have used whole wheat flour, semolina, oats and lots of nuts to make this delicious, spongy cake remembering my Bou.

This Christmas Nutty Cake, I baked as a treat on the eve of Christmas in memory of my late mother in law. She was a great fan of cakes.
I have used whole wheat flour, semolina, oats and lots of nuts to make this delicious, spongy cake remembering my Bou.

Take the larger grinder jar. Add sugar, curd and some milk and grind. Then add whole wheat flour and grind to get lump free batter.

Now add semolina, oats and milk. Keep 2Tbsp milk for future use. Grind well.

Then add oil and vanilla extract and grind.
Bring down the batter to a bowl and rest for 15 minutes, covered.

Grease the cake tin and dust with wheat flour. Heat the pot with a stand on medium flame(10 minutes) for baking.

Add baking powder to batter along with the rest milk. Mix and incorporate well with the batter.

Drop the cake batter to greased baking tin. Garnish and decorate with the ingredients mentioned.

Bake the cake on heated pot, covered for 1 minute on high flame and then medium flame till the cake is baked (nearly 35 to 40 minutes. Njoy the delicious and spongy Christmas Nutty Cake.
