Sweet Cream Cheese Tamales

Cream the lard or shortening with the cream cheese for a few minutes. Add the sweetened condensed milk and continue beating.

Add the baking powder, sugar, and salt. Beat until the mixture is light and airy.

Add the vanilla extract and red food coloring.

Warm the milk in the microwave.

Add the masa harina and milk in three parts, alternating between them. Continue beating.

Mix in the raisins and beat for a couple more minutes.

Soak the corn husks in advance until they are pliable.

Spoon a generous amount of the mixture (about one large ladle or two heaping serving spoons) onto each husk and spread. Fold the husks tightly and set aside.

Place a rack with hot water in a multi-cooker. Lay a couple of husks on the bottom, arrange the tamales on top, and cover with more husks.

Close the lid securely, seal the steam valve, and set the multi-cooker to the steam function for 45 minutes.

When done, let the pressure release naturally for 10 minutes, then open the valve. The tamales are ready.
