Assemble all chopped veggies

Mashed potatoes and keep aside.

In pan add tbsp oil, add ginger + green chilli, sauté for 2 minutes, then add carrot, beetroot, beans and sauté for 3-4 minutes. Veggies will shrink.

Add boiled green peas, add garam masala + red chilli powder + salt as required + turmeric and sauté for 4 - 5 minutes, veggies cooked nicely. Let it cool and discard the slit green chilli.

Now add the cooked veggie mixture to mashed potato along with chopped coriander and mix well. Add bread crumbs, mix well and take medium size ball. Give shape of cutlets to each balls and keep aside. Give any shape of your choice.

In mixing bowl, add maida + red chilli powder + salt + garam masala + water and make a slurry.
Add water gradually and make thin slurry but not runny. - 7
Spread bread crumbs on a plate, now dip each cutlet in the slurry and coat with bread crumbs all over and keep aside. Do this step for each cutlets.

Now in pan add oil, put cutlets in moderate heated oil and fry till golden brown and fry the other side too.

Repeat the same process for all cutlets and it is ready to serve.

Serve hot hot with tomato ketchup and tea or coffee is the best accompaniment.
