Plantain Lasagna

Cooking Instructions

Heat some oil on pan and minced meat. Stir fry

Add chopped scotch bonnet pepper, seasoning and salt. Stir until meat has turned from pink to brown and is dry

On a pan stir fry some onions. Add chopped bonnet pepper and garlic

Add tomato puree, season and allow to cook for 10 minutes until sauce well fried

Add cooked minced meat, chopped green bell pepper, red bell pepper and carrot

Add meat stock or water and bring the sauce to a simmer gently for 20 mins

Slice plantain into longs strips and fry. Drain the plantain of any excess oil after frying

Coat a pan with butter and add a layer of the meat sauce
- 9
Add a layer of plantain

Add a layer of cheese
- 11
Add a layer of meat sauce and another layer of plantain
- 12
Repeat until pan is full or ingredients are exhausted.
Top off with a generous layer of cheese - 13
Bake in a preheated oven at 180C for 10-15mins. Until the cheese melts and turns slightly brown

Take out the dish and allow to cool down and serve

I learned this lasagna from my mom-in-law. She taught me how to make it. When I was in Accra City, I tried to make on my own. It was successful and She is very proud of me. Lasagna is the meal that we used to prepare often at home in Germany. It is one of the family favorite meals.Notes. Lasagna could be prepared either only with vegetables or only with meat.
