Ingredients

  1. 1 kgMinced meat
  2. 4Plantains
  3. Mozarella cheese
  4. 1 cupchopped red bell pepper
  5. 1 cupchopped green bell pepper
  6. 1 cupchopped carrots
  7. 1/2 cupchopped scotch bonnet pepper
  8. Garlic
  9. Tomato puree
  10. Onions
  11. Seasoning
  12. Oil

Cooking Instructions

    Heat some oil on pan and minced meat. Stir fry

  2. 2

    Add chopped scotch bonnet pepper, seasoning and salt. Stir until meat has turned from pink to brown and is dry

    On a pan stir fry some onions. Add chopped bonnet pepper and garlic

  4. 4

    Add tomato puree, season and allow to cook for 10 minutes until sauce well fried

  5. 5

    Add cooked minced meat, chopped green bell pepper, red bell pepper and carrot

  6. 6

    Add meat stock or water and bring the sauce to a simmer gently for 20 mins

  7. 7

    Slice plantain into longs strips and fry. Drain the plantain of any excess oil after frying

    Coat a pan with butter and add a layer of the meat sauce

  9. 9

    Add a layer of plantain

  10. 10

    Add a layer of cheese

  11. 11

    Add a layer of meat sauce and another layer of plantain

  12. 12

    Repeat until pan is full or ingredients are exhausted.
    Top off with a generous layer of cheese

    Bake in a preheated oven at 180C for 10-15mins. Until the cheese melts and turns slightly brown

    Take out the dish and allow to cool down and serve
