Spicy thick liquid honey syrup for use in teas, hot wines, and other hot drinks, and a very precise way to add ginger flavor to cakes, breads, cookies and sauces. Simple to make, stays fresh a year in your pantry.

Break ginger root in pieces, scrub, rinse. Leaving the outer skin on gives a stronger ginger flavor. Chop and slice, pour 2 cups boiling water over pieces, slow boil till half the water has evaporated.

Drain ginger juice through kitchen towel and colander into pan. Save boiled ginger pieces in jar with tsp salt to eat with sushi.

Add cup of sugar, cup of honey to ginger juice concentrate, strir, bring to boil, pour in bottle, cap. Done, enjoy!
