Christmas special fruit n nut cake glazed with jam n honey

In a bowl soak dates, raisins, and berries, and keep aside. Set oven to 180°c and grease baking pan.

In a mixing bowl add oil/butter, and powdered sugar and whisk well until light and creamy.

Sift the dry ingredients into a large mixing bowl. Stir dry ingredients to blend thoroughly.

Combine wet ingredients with the dry ingredients, add milk gradually, add soaked and chopped nuts into the better and stir gently.

Pour the batter into greased baking pan and bake in preheated microwave oven for 30 -35 minutes, or until toothpick inserted comes out clean.

In a nonstick pan add jam and honey, stir on low flame until well combined or it get flowing consistency. Switch off the flame and pour on the baked cake and sprinkle some desiccated coconut on it.
