Easy Braised Winter Melon

I could not decide whether to make braised winter melon or winter melon soup, so I decided to make both in a same dish!

I used a "no water pot", so I started cooking on a very low heat, and the cooking time was short. If you are using a normal pot, it will be better to cook longer on low heat. The seasoning is subtle, so adjust the seasoning to your liking. Recipe by Shiokatsuo

Ingredients

2 servings
  1. 1/4Winter melon
  2. 1 1/2 tspChicken stock granules
  3. 1Water (to cover winter melon)
  4. 1 pieceGinger
  5. 1teaspoon~ Shiro-dashi (white soy sauce soup stock) or Dashi-jyoyu (stock and soy sauce mixture)
  6. 1Chopped green onion

Cooking Instructions

    Peel and deseed the winter melon. Cut into quarters and slice the quarters into 1 cm cubes.

    Put the winter melon, chicken stock granules and water in a small pot and let it come to a boil (lower to low heat upon boiling)

  3. 3

    Turn off the heat when the winter melon softens, add Shirodashi (white soy sauce soup stock) or dashi soy sauce and let it come to a boil.

    Plate and top with some chopped green onions.
