Vanilla cream & seasonal fruit mille-fueille

Preheat oven to 200 C.

On a lightly floured surface, roll out puff pastry until slightly thinner and tirm the edges straight to form a neat rectangle.

Line a large baking tray with greaseproof paper.

Divide the pastry into 12 equal rectangles and place them on the prepared baking tray.

Prick entire surface of the dough with a fork.

Brush with milk and sprinkle with castor sugar, than refrigerate for 30 minutes.

Remove the pastry from the fridge and bake in the oven for 10 minutes or until the pastry turns golden brown.

Remove from the oven and set aside to cool.

To assemble the mille-feuille, lay down one rectangle of pastry and pipe whipped cream along the top.

Place second pastry layer on top and gently press down so that the filling just starts to bulge over the edges.

Garnish the top layer with whipped cream and selected fruits and berries.

Alternate toppings:
instead of fruits and berries, try these toppings:
chocolate, grated or drizzled
chopped nuts
flaked almonds
caramel drizzle (try @caities easy caramel sauce) ;)
