Spinach Stuffed Salmon

Ingredients

1 pax per 200gm
  1. 200-400 gmSalmon
  2. Salt & Pepper
  3. Any Dry Rub (spices and herb of choice)
  4. 2 spoonfulBlanched Spinach,
  5. 1 spoonfulCream cheese or Ricotta,
  6. Olive oil

    First, prepare the salmon. Slice the skin off so it doesn't stick on the foil or pan. Using a pointy knife, carefully slit a pocket open in the middle, do not cut through.

    Season the salmon with salt, pepper and Dry Rub of choice. I'd use onion and garlic powder with salt and pepper, sometimes I use a variety of steak rub.

    Squeeze out any liquid from the blanched Spinach. Mix in the cream cheese or ricotta. Season with a little salt.

    Assemble the stuffed fish on an oiled pan or nonstick pan. Garnish with lemon peels/twists.

    Drizzle the salmon with very little olive oil to keep it moist.

    Preheat the oven to 200c. Place the rack slightly closer to the top heating element. Salmon cooks fast and you won't want to overcook it.

    Bake or Grill for 10-12 mins.

    I prefer mine moist and buttery so I stick to 10mins. 8 mins baked, the last 2 minutes in highest grill temp, about 250c.

    After cooking time, remove from oven immediately.
