Lentil Soup with Lemon (with Swiss Chard)

Ingredients

30 to 40 minutes
  1. 1 bunchSwiss chard (washed, chopped)
  2. 1 cupbrown lentils (washed, drained)
  3. 1large potato, diced (optional)
  4. 1carrot, diced (optional)
  5. 1 1/2 quartshot water
  6. 2bouillon cubes dissolved in water (optional)
  7. 3 tablespoonsolive oil
  8. 1large onion, chopped
  9. 1heaping teaspoon crushed garlic
  10. 1 tablespoonfresh cilantro, chopped
  11. 1 teaspooneach of:
  12. Salt
  13. Cumin
  14. 7-spice blend
  15. 1/4 teaspoonblack pepper
  16. Juice of 1 lemon 🍋 (more or less to taste)

Cooking Instructions

    In a pot over the stove, add the Swiss chard, lentils, potato, and carrot.
