This recipe comes from "A Napoli si mangia così" by Vittorio Gleijeses, a family cookbook treasured in our kitchen. I've tried it with different types of flour, and it always turns out great!

From the total amount of water, set aside one cup and dissolve the yeast in it.

Add the cup of water with dissolved yeast to the flour and start mixing; gradually add the rest of the water while kneading.

Finally, add salt to taste (I used 1 tablespoon, about 16 grams). The dough is ready when it is smooth, firm, and comes away easily from the work surface (as the book says: "When the dough snaps"). If using a stand mixer, stop when the sides of the bowl are clean.

Place the dough in a large bowl (at least twice its size), cover, and let it rise for 1 1/2 to 2 hours, until doubled in size. After rising, the dough is ready to be rolled out and topped.
