I bought a bunch of zucchini on sale, so I wanted to make a filling dish that would use a lot of it.

Thinly slice the zucchini, mince the onion, and then slice the bacon into 1 cm wide pieces

Put 1 teaspoon of olive oil in a hot frying pan, then stir fry the zucchini and onion. Once they have wilted, add the bacon and continue to stir fry.

Beat the egg in a bowl and add the milk, powdered cheese, and Italian herb mix and mix well. After the veggies cool, add this to the frying pan.

Heat a separate frying pan, add the other teaspoon of olive oil and butter, then pour in the egg mixture from Step 3. Gently cook over low-medium heat until evenly browned.

Flip it over and cook over low heat until golden brown. Then, it's ready!
