Ingredients

About an hour
4 people
  • 3 stripsbacon (chopped)
  • 1large onion, (chopped)
  • 4garlic cloves
  • 4carrots cut in circles
  • 4large russet potatoes (cut in cubes)
  • 1 boxcurry (I use EXTRA HOT)
  • 2 tspworcestershire sauce
  • 2 cupswhite rice (cooked in rice cooker or on stove)
  • Chicken
  • 4chicken breasts or thighs
  • 1 cuppanko bread crumbs
  • 1 cupall-purpose flour
  • 1/2 cupcornmeal
  • 2large eggs (whisked)
  • Salt and pepper
  • Oil for frying

    Cook rice.

    Cut carrots, potatoes, onions and garlic if not already minced.

    In a medium pot add bacon and cook till crispy. KEEP BACON AND GREASE!

    Slowly add 4½ cups of water to your bacon grease.

    Add your box of curry and let it melt.

    Add all the vegetables and garlic and cook till tender.

    While cooking add 2 tsp worcestershire sauce.

    Rinse chicken, pat dry; sprinkle all sides with salt and pepper.

    Place the flour, cornmeal and panko on a plate and then whisk the eggs.

    Dredge your chicken through flour, then egg, and then flour again.

    Heat enough oil in a frying pan to cover the bottom.

    Gently place 2-3 pieces of chicken in the hot oil at a time making sure they are not overlapping. Fry for 3-4 minutes on each side, or until golden brown. Flip with tongs and cook for another 3-4 minutes. Repeat until all chicken is cooked.

    Transfer chicken from oil to a cooling rack.

    Plate one side with rice, other side with curry and the top with the chicken.
    Enjoy! I know, I do. 😉
