Rinse,peel and grate carrots.

In a pot, add milk and boil it then add sugar and dissolve it on a low flame.

Then add carrots and bring the whole mixture to the boil and mix it.

On a medium low flame, grated carrots will cook in the milk and the milk starts to reduce and evaporate.

Now cook on high flame and keep on stirring in between.

When all milk evaporates add ghee and mix well.

Now keep stirring and continue to cook on high flame.

Towards the end add cardamom powder and dry fruits and give it a good mix.

Cover and put it on simmer for 2-3 minutes.

Gajar ka halwa is ready.
