Super Quick Kimchi & Tofu Simmer in the Microwave

I love kimchi. But my children don't really enjoy eating it, so I made just enough tofu simmer for myself. In the summer I top the kimchi on chilled tofu and eat just eat it like that.

I personally like firm tofu better, but you can use silken tofu or fried tofu if you want.
Since the tofu and kimchi can be eaten without being cooked, as soon as the meat has cooked, it's done.
You can flavor it with as much sesame oil and soy sauce as you want. Recipe by Mo-ri- mama

Ingredients

1 serving
  1. 100 gramsFirm tofu
  2. 15 gramsThinly sliced pork belly (or scraps)
  3. 50 gramsplus (to taste) Napa cabbage kimchi
  4. 1/2 tsp●Sesame oil
  5. 1 tsp●Soy sauce
  6. 1Green onions (optional)

Steps

  1. 1

    Place the tofu on a heat-resistant dish (preferably a deep dish) and cut into 6 pieces. Of course you don't need to cut it at all.

    Top with kimchi.

    Cut the pork into easy to eat pieces and place on top of the kimchi.

    Lightly cover with plastic wrap and microwave at 500 W for 3 minutes. Since the meat doesn't cook completely through very easily, turn the meat over after about 2 minutes.

    Once the pork has cooked through, pour in the sesame oil, soy sauce, and optionally garnish with green onion to finish.
