Ingredients

1 Hour
4 servings
  1. (1) For Pulav
  2. 1 CupBasmati Rice (cleaned & washed)
  3. 3Onions (Thinly Sliced)
  4. 1Tomato (Finely Chopped)
  5. 2Green Chillies
  6. 2Bay Leaves
  7. 1/4 TSPCumin Seeds
  8. 1 inchCinnamon Stick (Dalchini)
  9. 2 Cupswater
  10. 2 TBSPOil
  11. as per taste Salt
  12. (2) Gobhi Aloo
  13. 2 CupsCauliflower florets (cut into medium size)
  14. 2Potatoes (Medium diced)
  15. 1Tomato (Roughly Chopped)
  16. as required Oil for deep Frying
  17. 1 TSPRed Chilli Powder
  18. 1/4 TSPTurmeric Powder
  19. 1/2 TSPGaram Masala
  20. as per taste Salt
  21. as neededFinely chopped Green Garlic
  22. Handfulfinely chopped coriander leaves
  23. 1/2 TSPLemon Juice

  1. 1

    (1) Sindhi Pulav -
    To begin making the Sindhi Pulav, take the cleaned and washed rice in a large bowl, cover it completely with water and soak it for at least 30 minutes. Drain the water and keep aside.

  2. 2

    In a kadhai, heat oil add the onions, a pinch of salt and fry the onions till they become golden brown in colour. Make sure you saute the onions on low heat, else they will brown too quickly and wont get caramelized.

    Once the onions are caramelized, add the green chilies, cumin seeds, bay leaves, cinnamon and tomato to the onions and sauté them for another 2 minutes until the tomatoes have become soft.

    Stir in the rice to the spices and salt to taste and add 2 cups of water. Turn the heat to high until water reduces &
    Cover with lid and cook the rice on low flame for 3-5 minutes.

    The delicious and fragrant Sindhi Pulav with Caramelised Onions, is ready to be served.

  6. 6

    (2) Gobhi Aloo -
    Wash and pat dry the potato and cauliflower florets. Heat sufficient oil in a skillet and deep fry the potato and cauliflower till they are 80 percent cooked.

  7. 7

    In another, skillet heat 1 tbsp oil on a medium heat. Add in the red chilli powder and turmeric powder. Take care not to burn the spices.

    Add the deep-fried potato and cauliflower. Sprinkle salt and garam masala. Mix well.

  9. 9

    Add the tomato and green chilies. Mix well. Sprinkle some water if the mixture looks too dry. Cover the skillet with a lid till the veggies are completely cooked and have absorbed the flavors of the spices.

    Finish off with coriander leaves, green garlic and lemon juice. Mix well and cook for another 2 minutes.

    Complete your lunch box meal with fresh salad (Carrot, Cucumber), Papad & Carrot Real Grape Juice.
