Cocktail tricolour mini idli
Steps

Peel and grate the carrot. Grind to a fine paste.

Than make a spinach paste for green colour in a mixer grinder

Make a suji batter.Take a bowl add suji n curd.mix it than add water for fine consistency. Than add baking soda,mix well.

Add 11/2 cup suji batter to the carrot puree (For Saffron Colour) & 1/2 cup to the green paste (For Green Colour). Mix well. Leave 1/2 cup batter as such (For White colour).add black pepper powder in plain batter

Grease the mini idli plate with oil and fill idli plate with plain batter, carrot batter and green batter. I'm using a mini idli mould.
Steam for 7 to 8 minutes until done. - 6
Carefully take out idlis from the sides and serve it with chutney or sambar.
