2 people
  • 2 cupschopped winter carrots
  • 2 cupsdiced baking potato
  • 2 cupschopped yellow onion
  • Tbsbutter, tsp ground pepper, 1/2 ts salt
  • Cost, veggies $1, other 20 cents, 60 cents per meal

Steps

1 hour.
  1. 1

    Wash, chop and dice veggies, put in dutch oven, cover with water, lid on, steam 20 minutes till tender.

    Pour water off, add Tbs butter, pepper, salt, mash till creamy. Serve with bratwurst, hot dog, tofu, bacon. Enjoy.

I teach people at the farmers market to grow small scale fruits and vegetables. My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
