The winter carrots are fresh and beautiful at the moment, they make a great vegetarian dinner with cocconut cream, or dairy cream if preferred. Easily prepared under an hour.

Chop onion, garlic, glaze in Tbs olive oil in dutch oven. Wash carrots, potato, chop, add to glazed onion. Add 4 cups of boiling water to 3 bouillion cubes, add to veggies, boil 20 minutes, take out veggies, puree in processor.

Put pureed veggies back in broth, add cup of coconut cream or dairy cream, teaspoon of hot smoked paprika powder, bring to boil, serve. Sprinkle with fresh garnish of celery leaves, cilantro, parsley or black pepper. Enjoy.
