Suran ki Sabji

Apply some oil over the palms and peel the suran /jimikand. Cut them into small dices.

Now in a pressure cooker, heat ghee add cumin seeds and mustard seeds. Let them crackle.

Next add the spices and saute for a minute. Add the whisked curd. Mix well.

Add the diced suran. Give a good stir. Add 1/2 glass of water. Once again mix everything together well.

Close the lid of cooker. Let it cook till 2 whistles.

Transfer to a serving bowl. Garnish with freshly chopped coriander leaves.

Tip : Applying oil over palms while handling suran helps prevent itching.

Tip : Remember to use any sour ingredients like curd or lemon juice while preparing suran.
