Broccoli stuffed Omelette

Broccoli being a winter veggie, so prepared an Omelette but with a twist .
The Omelette is stuffed with Broccoli, Sweet Corn and Cheese.
It is a very filling Omelette and a great morning snacking as it is full of broccoli flavour and cheesy.

Steps

Boil broccoli florets, strain water and keep aside. Cut bread into pieces and toast on tawa to make crispy and keep aside. Assemble all other ingredients.

Stir fry broccoli florets in 1 tbsp butter and keep aside.

Stir fry corn kernels in 1/2 tbsp butter and keep aside.

In a mixing bowl, break 2 eggs and whisk well. Then add salt + pepper powder + milk and whisk very well.
Repeat this same process in another bowl with remaining 2 eggs. - 5
Add 2.5 tbsp butter on a pan and keep under low flame, Now add the toasted bread pieces (2) into egg mixture and mix gently, bread will absorb the egg mixture. So immediately pour the mixture on pan and spread evenly.

Mixture will start firming, then start placing broccoli, corn, cheese and sprinkle oregano + salt + chilli flakes. Flame should be kept in low. This process has to be done quickly.

Now cover the stuffing with the egg + bread mixture nicely and cover it and cook for 3-4 minutes. Flip the other side carefully through the help of a plate and cook the other side also for 3-4 minutes under cover.

Now Broccoli stuffed Omelette is ready to serve.

Cut into pieces and serve.
