Steps

Wash all vegetables well, peel potatoes and radish and cut all vegetables in cubes. Set aside

In a wok heat mustard oil, add panchphoron, bay leaf, whole red chilli and add first potatoes, radish and fry for 3-4 mins. Then add eggplants and cook for 2 mins more

Add turmeric powder, red chilli powder, salt and mix well. Add peas and mix well

Add 1/2 cup water and stir. Cover and on low flame cook.

Once cooked, sprinkle garam masala powder, mix and set aside
- 6
Serve with steamed rice and garnish coriander leaves. Enjoy!
