Cooking Instructions

Pour the milk into a heavy bottomed pan. Summer over a low flame till the milk reduces to almost one third. Stir in between.

Once the milk reduced add sugar. Stir continuously. Add more sugar as your taste.

Remove from heat and allow the milk to cool in room temperature. Stir in the orange juice.

Add the orange zest and the orange segments. give it a gentle mix. Refrigerate at least 1-2 hour.

Serve chilled in orange cell garnish with almonds, pistachios. And orange tuile.

After enjoying a simple yet delicious lunch at my parents' a few years ago as I sat chatting with my mother, I asked her " Meethein mein kya hain ? " She smiled at me, got up and vanished from the room . I was expecting a bowl of ice cream or some mangoes but instead she appeared with this bowl and said, " Lo, Kheer Khao !" Since it was an extremely hot, humid day, I happily grabbed the bowl and indulged in this bowlful of goodness. While polishing it off, I had already guessed a few ingredients of this unique kheer, but I loved it so much that I got her to immediately share the recipe with me which she had adapted from a recipe she chanced upon on one of the cookery shows on a Marathi Channel on TV which she follows dillegently. It is a gem of a recipe... healthy, tasty and absolutely worth trying so I am sharing it here. Sonal Sardesai Gautam
