Boil 8 guajillo chiles and 2 ancho chiles. Once cooked, drain them and blend with 1 garlic clove, salt, 1/4 onion, a pinch of oregano, 3 black peppercorns, 1 cube of achiote paste, a small splash of vinegar, and the juice of 1 orange.

Coat the chicken breast well with this marinade and let it marinate for 1 hour in the refrigerator in a container with a lid or covered with plastic wrap.

Cook the chicken in a skillet with oil. Once cooked through, remove from the pan.

In the same skillet, add a little more oil and cook the pearl onions until golden brown. Remove them, then add diced or sliced pineapple and cook until lightly browned.

Serve the chicken, shredded, in warmed tortillas with a little oil or as a quesadilla. Top with pineapple, onion, cilantro, salsa, and guacamole. Add the golden pearl onions. Ready to enjoy!
