Carrots and Methi Leaves/Fenugreek are winter veggies and leafy vegetable. It's easy to prepare and delicious in taste.
I have used my kitchen garden methi leaves with carrots and potatoes to make this awesome dry curry.

Carrots and Methi Leaves/Fenugreek are winter veggies and leafy vegetable. It's easy to prepare and delicious in taste.
I have used my kitchen garden methi leaves with carrots and potatoes to make this awesome dry curry.
Steps

Wash the methi leaves and chop them. Chop the veggies.

Heat ghee in a pressure cooker. Add cumin and mustard seeds and allow to crackle.

Mix veggies, tomatoes, ginger and salt. Saute the veggies mix on low tt medium flame for 2-3 minutes. Cover and cook till veggies are nearly done.

Then add chopped Methi Leaves and mix well. Pressure cook for half whistle and allow to release pressure naturally. The carrots and Methi Leaves dry curry is ready to serve with paratha, poori.
