Fritters are stuffed with a veggie preparation and outer cover is made of potato.
Served with spicy Coconut Chutney

Finely chop potato and marinade with salt for 10 -12 minutes. Potato will release water, so squeeze excess water.

Assemble all other ingredients, finely chop onion.

In pan add oil, add squeezed potatoes + onion and sauté till onion turns translucent, then add green chilli + capsicum and carrot and sauté for 5-6 minutes by adding slight salt + turmeric + garam masala.
The veggies are cooked and stuffing is ready. Discard green chilli. - 4
Now mash boiled potatoes, add salt + red chilli powder + pepper powder + corn flour and mix very nicely. It will take shape of a dough.

Now grease palms, extract medium size balls from dough and flat it by pressing very gently. Now place the filling right in the middle and seal it with the help of the edges and cover it by giving shape of balls. Now coat balls with corn flour and keep aside.
Dust out extra corn flour. - 6
Now shallow fry on both sides till golden brown under medium flame. Now stuffed potato fritters is ready to serve.

Serve with tomato ketchup and coconut chutney.

In a mixer grinder add grated coconut + ginger + green chilli + Chana dal + sugar + salt + 1/4 cup water and grind all together into a smooth paste.

In moderately heated pan, add oil, add dry red chilli + mustard seeds and allow to crackle, then add Urad Dal + curry leaves + hing and sauté for 1-2 minutes, then add coconut paste into it and simmer for 2-3 minutes. Coconut chutney is ready.
