Ingredients

  • 1and a 1/2 cups cassava peeled and diced into 1 inch cylinders
  • 2 tbspoil
  • 1 medium onion pureed
  • 1 medium tomatoes pureed

    Boil cassava in a pressure cooker allowing the whistle to release 5 times or until they are cooked.

    Heat oil and fry onion puree till oil oozes. Next add tomato puree, salt and chilli powder. Fry till oil oozes. Add boiled cassava along with the broth. Add more water if required. Bring it to a boil on low heat and it's ready!

    Enjoy it with rice. Cassava is usually way too starchy, hence the curry thickens as it cools down. So foot burn out the curry while boiling.
