An absolute delicious and creamy dessert which is a winter delight.

Coarsely grate carrots

Ghee and condensed milk

In pan add ghee, then add grated carrots + salt and sauté under medium flame for 8 - 9 minutes.

Carrot is cooked and it shrinks, keep aside.

In pan add milk, give a rolling boil, then add sugar and let it dissolve, simmer milk for 4-5 minutes.

Add Condensed milk and stir well for 3-4 minutes under low flame, Milk thickens.

Now add carrot + cardamom powder + dry fruits, mix well and cook for 7-8 minutes. Carrot Kheer is ready.

Keep stirring while cooling, after its cooled to some extent, pour in individual bowls / cups and refrigerate for 2-3 hours. Kheer is ready to serve.
