Steamed clams with sake - 'Sakamushi'

Found beautiful clams in the fish market in Spain, and these clams are meant to be eaten raw with lemon!!
Brought back to UK, and they're still live. But a bit scare to eat raw, after two days, so lightly steamed with sake, a Japanese alcohol.
We call it 'saka-mushi' in Japanese, and it means steam with sake.

Wash clams, not too much. Put in to the pot.

Pour sake, which can be white wine, and put a lid to steam. Swing the pot a bit to help open the shells.

Because it's so fresh that you could eat raw, do not overheat.
The sake and lightly steam makes the meat very soft.
The leftover soup tastes great, too. You can enjoy as a soup, or soak up with bread if you like.
