Suitable for vegetarians and gluten free but you don't need to be either to enjoy this cake. It's one of my family favourites and is so easy to make.

Suitable for vegetarians and gluten free but you don't need to be either to enjoy this cake. It's one of my family favourites and is so easy to make.

Preheat the oven to 180C. Cream butter and sugar.

Add eggs, lemon zest, 6 TBSP lemon juice, and vanilla. Mix to combine.

Add ground almond, plain flour, xanthan gum and baking powder. Fold to combine all ingredients.

Pour into. Lined load tin. Place in the centre of the oven and bake for,50-60 minutes until golden and firm to the touch. To test the cake is cooked inside, put a skewer into the middle of the cake and remove. If the skewer comes out clean, the cake is cooked. If it has cake mixture on the skewer, return to the oven for 10 minutes longer.

Once the cake is removed from the oven, set aside to cool. In the meantime, sift 125g icing sugar into a bowl and add 6-8 TBSP of lemon juice. Mix until smooth.

Pour icing over the cake. Add a sprinkling of lemon zest and leave to harden. Serve.
