Oven-Baked Golden Polenta

Sometimes you might have leftover polenta, or maybe you make extra on purpose (not that I’m speaking from experience... 🤭) so you can use it in other ways. This is one of my favorite ways to reuse it—it turns out crispy and irresistible, and you can pair it with so many dishes! 😍

Sometimes you might have leftover polenta, or maybe you make extra on purpose (not that I’m speaking from experience... 🤭) so you can use it in other ways. This is one of my favorite ways to reuse it—it turns out crispy and irresistible, and you can pair it with so many dishes! 😍
Steps
- 1
Prepare the polenta according to the package instructions (whether using traditional or instant polenta).
- 2
Pour the hot polenta into a wide, shallow baking dish lightly greased with a little garlic oil. Spread it evenly and let it cool completely. If using leftover polenta, skip the first two steps.
- 3
Once the polenta is completely cool and firm, cut it into slices, sticks, cubes, or any shape you like for your intended use. Brush with garlic oil and sprinkle with your choice of spices or herbs and a pinch of salt.
- 4
COOKING METHOD 1: Place the polenta pieces in the basket of an air fryer and cook at 400°F (200°C) for 20 minutes, or until crispy and golden.
- 5
COOKING METHOD 2: Place the polenta pieces on a baking sheet lined with parchment paper and bake in a preheated oven at 430°F (220°C) for 20-25 minutes, or until crispy and golden.
- 6
Serve the hot polenta with your favorite dishes!
